Payar Curry Vanpayar (Lal Chawali/Red Chori/Red Cowpeas Curry) is a known legume and a favourite of every keralite. It’s normally eaten with hot Kanji and every ‘traditional’ Malayalee will not trade this dish for anything else. This is like chicken Soup to their Soul. Ingredients: Vanpayar – 1 cup Grated Coconut – 1/4 cup Small Onion – 2 nos Ginger – 1 small piece Garlic – 2 flakes Green chillies – 1 no Turmeric powder – 1/2 tsp Red Chilli Powder – 1/2 tsp Oil – 1 tsp Curry leaves – 1 spring Salt – as required Method: Soak the vanpayar for 1 hour. Cook it in the pressure cooker along with salt and water. Grind together Small onion, Ginger, Garlic and Green chillies. Pour oil into a pan and add the ground mixture and fry. Add turmeric and chilli powder to this. Add the grated coconut and mix it. Add the cooked vanpayar to it and mix well. This curry can be served with Rice or Kanji.
