It is made of raw plantains and Yams sliced and boiled in water with salt and chillies or pepper added. The pulp of the coconut is ground with a little cumin seed added to it. When the whole thing is properly boiled, a few mustard seeds along with scraped coconut pulp fried in coconut oil, is added in to it to give it flavor. Erissery is also made with pumpkin and red oriental beans, the recipe is given below.
1. Elephant Yam (chena) cut into cubes – 1 and a half cup2. Raw Banana cut into cubes – 1 and a half cup3. Coconut – 1 cup1. Pepper – 102. Dry Red Chillies – 23. Cumin (Jeerakam) – 1/2 tsp4. Salt – as required5. Oil – 6 tbspn6. Curry leaves – 1 stem7. Mustard seeds – 1 tsp8. Urad Dal – 1 tsp9. Turmeric powder – 1 tsp10. Ghee – 1 tbsp
Grind half of coconut with the rest of the ingredients in item number 3. Cook Chena and raw banana in water along with turmeric powder and salt. Add the grinded coconut with this and boil. Heat oil in a pan and fry curry leaves, coconut and dry red chillies. Add this to the cooked curry. Add ghee to this after removing from the stove.
